Freeze Sweet Potatoes

- Rinse and peel
- cut into 1-2" cubes or slices
- Blanch by boiling 3-5 minutes
- Cool in ice water to stop cooking
- pat dry
- freeze flat on baking sheet with parchment 2-3 hours
- transfer to bag and store "up to 6-8 months"
- To cook: thaw overnight in the fridge or cook frozen
