One way to know the dough you've been kneading is ready to begin proofing is this WPT

Taking a chunk of dough about the size of a golfball, gently stretch without tearing until light can shine through.

Often even after 10+ minutes kneading this won't occur, trust your gut, or let it sit 5 minutes before kneading more.
